CHICKEN WINGS! Three Ways!

OK, OK- I might have been a little misleading with the title here. It’s just kind of something that I make fun of when we go to one of those high-faluten joints. You know, the kind that don’t have chicken wings on the menu. My wife has a friend that owns one of these places in New Orleans- and we went there not long ago. What was on the menu? Pork belly- Three Ways. So, maybe kind of like a chicken wing! Don’t get me wrong- it was good. REALLY good. But- no wings!

There’s nothing quite like biting into a perfectly cooked chicken wing. Whether you’re a fan of spicy, sweet, or savory flavors, chicken wings offer a little something for everyone. Today, I’m going to share some of my favorite chicken wing recipes that are sure to be a hit at your next gathering. So, let’s dive in and discover the best ways to prepare and enjoy these tasty treats! And as you can see, mix and match- you’ll get them WAY more than 3 ways!

Why Chicken Wings?

Chicken wings have earned a special place in the hearts (and stomachs) of many food enthusiasts- and BBQ guys like myself. But what makes them so irresistible? Let’s break it down- really two reasons.

  • Versatility- Chicken wings are incredibly versatile. You can bake them, grill them, fry them, and toss them in a variety of sauces and rubs to suit any taste preference. Whether you’re hosting a game night or just craving a delicious snack, chicken wings are a go-to option.
  • Popularity- It’s no secret that chicken wings are a popular choice for parties and casual get-togethers. They’re easy to share, fun to eat, and can be customized to please a crowd. From classic buffalo wings to more adventurous flavors like sriracha or honey garlic, there’s a wing recipe out there for everyone.

Choosing the Right Wings

Before we get into the cooking, it’s important to choose the right chicken wings. Here are a couple of tips to help you pick the best ones.

  • Fresh vs. Frozen- Fresh chicken wings tend to have better texture and flavor compared to frozen ones. However, frozen wings are convenient and can be just as tasty if prepared correctly. If you go with frozen wings, make sure to thaw them thoroughly before cooking.
  • Size Matters- When selecting chicken wings, try to choose ones that are similar in size. This ensures even cooking, so you don’t end up with some wings being overcooked while others are still underdone.

Preparing Your Chicken Wings

Now that you’ve got your wings, it’s time to prepare them for cooking. This step is crucial to achieving that perfect flavor and texture.

  1. Cleaning and Cutting- Start by rinsing the wings under cold water and patting them dry with paper towels. If the wings aren’t already cut, separate the drumette, flat, and tip. You can discard the tips or save them for making chicken stock- my wife has done this several times and we end up with awesome, homemade chicken and rice soup!
  2. Marinades and Rubs- A good marinade or rub can take your chicken wings to the next level. Here are a couple of my favorite recipes.

Classic Buffalo Marinade- For that traditional buffalo flavor, combine hot sauce, melted butter, garlic powder, and a touch of vinegar. Let the wings marinate for at least an hour to soak up all that spicy goodness.

Tangy BBQ Rub- If you’re in the mood for something sweeter, try a tangy BBQ rub. Mix brown sugar, paprika, garlic powder, onion powder, and a pinch of cayenne pepper. Rub this mixture all over the wings and let them sit for a few hours or overnight- just make sure they stay in the fridge.

Cooking Methods

There are several ways to cook chicken wings, each offering a unique flavor and texture. Let’s explore the most popular methods.

  • Baking- Baking is a healthier option that still yields crispy wings. Preheat your oven to 400°F (200°C) and arrange the wings on a baking sheet lined with parchment paper. Bake for about 40-45 minutes, flipping halfway through, until they’re golden brown and crispy.
  • Grilling- Grilling adds a smoky flavor that’s hard to beat. Preheat your grill to medium-high heat and oil the grates to prevent sticking. Grill the wings for about 20-25 minutes, turning occasionally, until they’re cooked through and charred to perfection.
  • Frying- For the crispiest wings, frying is the way to go. Heat a deep fryer or a large pot with oil to 350°F (175°C). Fry the wings in batches for about 8-10 minutes, or until they’re golden brown and crispy. Drain on paper towels before tossing in your favorite sauce.
  • AIR FRYER- This is the best way if you are like me… and want to watch your girl-ish figure! Half the oil and calories of the deep fried variety.

Tasty Chicken Wing Recipes

Ready to get cooking? Here are three delicious chicken wing recipes that you can try at home.

  • Classic Buffalo Wings- For a traditional take, coat your baked or fried wings in the classic buffalo marinade. Serve with celery sticks and blue cheese dressing for an authentic experience.
  • Honey Garlic Wings- For a sweet and savory option, combine honey, soy sauce, garlic, and a touch of ginger. Toss the wings in this sticky sauce and garnish with sesame seeds and chopped green onions.
  • Spicy Sriracha Wings- If you like a bit of heat, these sriracha wings are perfect. Mix sriracha sauce, honey, lime juice, and garlic. Coat the wings and bake or grill until they’re caramelized and spicy.

Serving Suggestions

Now that your wings are ready, it’s time to think about the perfect accompaniments. Here are some ideas to complete your meal.

Sauces and Dips

While wings are delicious on their own, dipping sauces can elevate the experience. Try ranch, blue cheese, or a tangy mustard dip. For a twist, serve with a spicy aioli or a cool cucumber yogurt dip- maybe something like this.

Side Dishes

Pair your wings with classic sides like coleslaw, potato wedges, or a fresh garden salad. For something different, try sweet potato fries or grilled corn on the cob. These sides complement the flavors of the wings without overpowering them. OR- just make some barbeque and the wings can be your side or maybe an appetizer!

Chicken wings are a delicious and versatile dish that’s perfect for any occasion. Whether you prefer them spicy, sweet, or somewhere in between, there’s a recipe out there for you. I hope you’ve found some inspiration here to try new flavors and cooking methods. Happy cooking and enjoy your wings!

My initial goal of demystifying grilling and smoking (in short: outdoor cooking) has evolved into a commitment to bring info about grilling and smoking to the widest audience possible. Remember, bar-be-que is not just about the food, it's about the friends you make along the way!
